I saw a really nice greyscale paint scheme I want to try. It was done like flames or smoke, where the model was basically painted a neutral grey, the tips were highlighted white, the areas further down were blackish, and the shades melded the further up the model you went. The problem is I've never painted greys before and I hear it's rather difficult. I know wetblending is going to come in handy, but what how should I go about basecoating/highlighting/shading with a scheme like this?

Could you show us a reference pic of what you're looking to achieve. I don't find gray a difficult color to paint, it shades to black easily and shades up to white easily, gray paints usually always give great, smooth coverages in minimal coats.

Hard to tell without pics.

For gray I'd recommand a celestra grey base (you can't go wrong with this, + the paint get worked like a charm).

For a colder grey, go for subtle blue
Shade > diluted drakenhof nightshade
Edge > fenrisian grey
Highlights > ulthuan grey

For a warmer grey
Shade > (diluted ?) nuln oil
Edge > ~Dawnstone / Administratum Grey
Highlight > ~Administratum Grey / Screaming skull (finish more "used")
